AI in Dietetics Practice: Empowering the Future of Nutrition Care
Overview
Artificial intelligence (AI) is rapidly transforming the field of nutrition and dietetics — from personalized dietary assessment to predictive health analytics and food system monitoring. AI and large language models (LLMs) offer powerful tools to improve accuracy, save time, and expand professional impact.
This hands-on workshop equips dietitians with practical skills to leverage AI responsibly, including how to craft effective prompts for LLMs, interpret results, and integrate them into clinical, community, food safety, and education settings — all while remaining ethical, evidence-based, and patient-centered.
Who Should Attend
- Registered/licensed dietitians and nutritionists working in clinical, community, or food service settings.
- Diet center managers and consultants looking to optimize workflows.
- Health professionals interested in digital transformation and data-driven nutrition care.
Participants are encouraged to bring if available, anonymized databases or client case examples to use in the interactive exercises.
Learning Outcomes
By the end of the workshop, participants will be able to:
- Understand the fundamentals of AI, machine learning, and large language models.
- Apply AI and LLMs (e.g., ChatGPT, Gemini) for practical dietetics tasks: meal planning, documentation, education, and analysis.
- Identify opportunities and gaps for AI use across clinical, community, and food sectors.
- Write effective, ethical prompts for nutrition-specific applications.
- Recognize the ethical, legal, and professional boundaries of AI use in dietetics.
- Reflect on the evolving role of dietitians in a data- and AI-driven future.
